
Nestled in the picturesque hills of the Chablais Vaudois region, the Abbaye de Salaz is a hidden gem for wine enthusiasts. We had the privilege of visiting this remarkable winery and meeting Janine, one of the owners, who warmly welcomed us with a private tour of the estate. As she shared stories about her family’s connection to the vineyard, we were transported back in time to when monks first established the abbey hundreds of years ago. Today, Janine and her brother passionately carry on this legacy, cultivating the vines and crafting exquisite wines that reflect both tradition and innovation.



The vineyards of Abbaye de Salaz are truly a sight to behold. Built on terraces, they cascade down the hillsides, basking in a climate enhanced by mild temperatures. This unique terroir allows for the cultivation of many different grape varieties, including Chasselas, Pinot Noir, Merlot, and Gamaret.



During our visit, Janine explained how these varieties thrive in the rich soils, resulting in wines with distinct flavors and exceptional quality. It was inspiring to see how this family-run business remains deeply rooted in sustainability, preserving the natural beauty of their land while producing wines that honor their heritage. We also absolutely loved meeting the three adorable pigs on the farm, who play a unique role in helping to keep the grass trimmed..


The highlight of our visit was the wine tasting. We sampled an array of wines that showcased the diversity of their production. From crisp whites to robust reds like their Pinot Noir and Merlot. One standout was their signature Chasselas—a beautifully balanced white wine. Janine graciously prepared some homemade focaccia for us to enjoy alongside our wine tasting.
